I would be curious to hear if that one year difference changes insurance rates &/or coverage.

It seems the production year definitions were not defined too well. All documents that I have on my 90, as well as the vin # say that it was built in 1990. When I look at the ecu harness though, it is color coded as a 91.
 
If you peak into the front drivers side radiator support there is a buck tag there and it will have the production date stamped into it, you can compare and see if everything jives. Also check out www.mustanggt.org and have that guy do the production info for you and then you can see for sure if something fishy is up.
 
There should also be a white tag on every removable piece of body work on the car... doors, fenders, hatch/trunk and hood. The number on that tag should match the VIN on your title. You can also look under the rear seat and see if the build sheet is there.

The reason I mentioned the buck tag is that it will have the day the car was built on it rather than just the VIN #.
