PC monitor in a car.

I have a Pioneer touch screen audio system in my car and I would like to hookup a nice pc monitor to it if I can. I have done some research on something like this but I can't find anyone who has done it loke this before. Everyone hooks up their computer to their tv or an xbox to a pc monitor. Has anyone done this or know someone who has done this? The Pioneer has RCA out only and the monitor has VGA and DVI.

The adapters are out there, but I'm not sure how it will work with a touch screen.
