From my limited understanding, the Positive Crankcase Valve is necessary for better fuel economy......I saw some PCV delete kits offered at vmptuning.com; what is the purpose/point in deleting the PCV? Perhaps this is a stupidly amatuer question, from a limited knowledge for which I apologize in advance.

The main benifit is that oil vapors don't make it into the cylinder which lowers the octane rating and increases the risk of pinging. An oil seperator or a filter of some sort (inline fuel filters usually) can seperate the oil out and let your car run better.

On a daily driver, there would be little to no advantage to deleting your PCV system.
Installing an air/oil separator would be about the best thing you could do for your situation. The link in my sig has a how-to for the V8's.. should be close for V6's as well, just a different tube to tap in to.
