Are there kits out there that allow you to upgrade from manual to power brakes without changing your manual brake pedal?

yes.
NPD carries the new kits that use the stock non-boosted pedal.
I am sure most of the bigger Mustang shops have these kits now.

thanks for the responses, not having to replace the pedal will certainly save me some time.
