Will a 275-60-15 hook better than a 275-50-15?

yes it should just because of the extra side wall...but remember its going to effectively lengthen your gear ratio...numerically lower

The reason I'm asking is I'm trying to figure out if I'm going to have traction problems. I already bought the 28" DR's. The drivetrain is 4.10 gears, a built AOD with full manual, 3200 stall and transbrake. For power I have an S-trim, and F-cam, 75mm TB, 75mm MAF, and an electric fan. The suspension is 4 cyl springs front, stock springs in the rear, lakewood 90/10 front, 50/50 rear, control arms and subframe connectors.

I have the tires but they aren't on yet and as it sits it blows the tires away in 2nd. Will the 28 DR's be enough to launch it on the transbrake?

Well there are a lot of guys running very fast with those tires, but suspension and track conditions have a lot to do with it as well. The only way to find out with your set-up will be to try them out.
