Can I run redline 80W-140 in the 8.8 (specifies 75W-140) w/o problems (I am in the south were it never gets below freezing). The redline says it has the friction modifier in it, but will I need to add some of the ford stuff also?

Should be fine. I was told that you should always put ford friction modifier in there anyways. I was also told you should change your rear end fluid every 15,000 miles since the friction modifier starts to break down the rear end fluid after a while. I'm probably going to put redline 80w-90 in next time i do a fluid change.. also its a good idea to get a rear end cover that has a drain and fill plug so you don't have to keep siliconing the stock cover/ paying to have it siliconed.
