I think you might be able to tell the stall rpm by holding brakes and press gas, see where the rpm tops out.

stall depends on the engine its behind, if its behind a stock 2bl 289, you might get 1400 out of it, if it were behind, say, a 351, it may stall at 1800 rpm.

I've always heard 1400-1600, but that seems to basically agree with what others have answered. That put the stall right in the heart of the stock torque curve

Does a higher stall convertor allow a car with a lumpy cam idle better when the tranny is in gear?

I can get my car to idle great when it's in park or neutral, but when I put it in gear it will stall out (unless I put an obscene amount of initial timing into it).

Great68, yes, a higher stall speed will allow your engine to idle better (with a bigger cam) in gear.

It used to be Ok with my old motor combo, but with the new heads and intake and everything, it has a harder time.

Idle speed is controlled by your carb. A stock 289 would idle at about 700RPM even though the stall was rated for ~1500. I have a 2800 stall in mine but that does not have anything to do with idle speed. In all but the most extreme setups idle speed will be well below stall speed, and putting the car in gear should not have a significant effect on idle RPMs. If your new cam causes your car to idle roughly while in gear I suggest opening up the venturi a little bit. This will cause it to idle at what seems to be a high RPM while in park or neutral but that is what you need to do with racier cams.
