I got some Steeda Sport springs for my 03 GT and I am going to be replacing the stock shocks/struts w/ Bilstein HD's. When I was looking at them, they kept saying for ride height: Stock. Since they car will be lowered, that doesn't really matter that much, right? Is Steeda Sports and Bilsteins a good combo?

no, get some strusts for lowered car or else your going to have to get new struts sooner than needed. my buddy has that combo on his cobra and it ride alright. about what you expect for a lowered car.

I never had a problem running lowered springs with stock shocks/struts. Other than 'stock' struts wearing down after repeated spring rate jaring you won't have that problem with aftermkt ones.

I've got 03 cobra bilstiens on mine with steeda sports up front.. no probs.. the backs are just as low (different springs due to IRS) but it rides fine.

The rears are the same, but you can use the old fox body ones for the front as they made taller stock shocks for the sn95 as the assembly line had a high clearance to make.
