Temp sensor question

I have a 96 Mustang gt, which had a 01 cobra engine transplanted before i bought it. I found out that the cobra engines went from two temp sensors to one, but which is the one that feeds the pcm to kick the fans over.
 
For the 96 MY, the PCM ECT temperature sensor uses the LG/R and GY/R wires. This is the sensor that tells the PCM the motor temperature.

The dash temperature gauge uses the R/W and Y/R wires.

The two sensors are NOT interchangable.

For the 99+ MY, a single ECT sensor is used. The PCM tells the dash what temperature to display.
