I understand that. At least I think I do... what I dont get is that everything to me appears to be installed correctly but things are not lining up. Oh, I washed my hands!

The thing that lines up on the star gear is sitting to low. The star can loosen or tighten. The pressed retainer thing is supposed to only let it tighten. Look at the pictures again.
You can see in this pic that the retainer is just on the star not holding it.
And I'm covered in antiseize again.

Looks good to me, pull back on the cable (like the shoe would) and watch it lift, release the cable it should spin the wheel.
Look at the amount of threads showing on the adjuster on that side and the lack of threads on the other.

I'm not sure what you mean by the amount of threads showing adjuster on that side. I have not digged into the the info on here about this so I could definitely be missing something there. The shoes appear to be in the proper position.
that self adjuster is not up on top like it should be... see in pic below.. I just did mine a week a so ago... and everything looks like in this video..
Also, the Red (bottom spring) I see in your pic of the other side, you have it on the back side, where everything I seen show the spring on the top side like in pic below... not sure if that makes an difference in function or not.. but in any case if that spring is pulling it tight like it should, that self adjuster tab/lever should be getting pulled into the correct position like seen below.
the Pass side, looks right with how the self adjusting lever is setting (except the red spring is on the inside). On your drivers side, everything looks like it's right... the shoe with more pad surface (is the secondary shoe, and goes to the back, so that looks right) so I'm not sure why that adjuster lever is not up like it should be.

Thanks for the feedback and input guys! I'm not sure what is going on with that brake. I'm going to completely tear it down and inspect it. The red spring on the other side is connected different from how it is shown in the video, but everything seems to be lined up properly. I might take it loose and connect it like in the video just to be safe though.
On the left break the self adjuster lever is just hanging to low to function correctly. I can work the brake like General describes, but it doesn't work right because it is hanging to low. I'm glad I posted the pic though, as I would not have noticed this and it could have caused issues later.
I can safely say that I have learned a lot tinkering with this old car!

I think this is your problem, that part I circled, that part the cable goes over, has a little lip in the back that should be in that hole the end of spring goes in... so that part needs to move to the right more... which should make that cable that goes down to the self adjuster lever tighter and lift it up where it needs to be. The way it is now, that should/would make that cable looser/more slack in it.

I see what you are talking about. That thing doesn't look like it is seated correctly. And yes, if it moved back more it would pick up on the adjuster lever. My in-laws are coming in today to stay for the weekend. Hopefully I can find a few minutes to check this out. I think you nailed it though.
Yeah, I everything else looks correct... so once you get that into position you should be fine. now the pass side, like I said you have the red bottom spring on the back side... not sure if that will really make difference in function, but if were me I would put it like they intended... below is pic from the 1990 service manual that shows it the way it is in video also.
That lever on the adjuster definitely looks like it is sitting better, as it should. Hope that got it for you!

Antiseize on those wheel studs is a big no no,lug nuts have a higher chance of coming loose.
Also on the face of the hub,friction between the wheel and hub face are what keep the wheel from shearing the studs under load,it's important to keep these surfaces clean.

I have not been in the habit of putting antiseize on the wheels, but then it was suggested, and thats what they do in the LMR video. In the video they do not put antiseiz
