Some brands, like the professional products and whoever UPR carries (might be PP too) as well as Granatelli are the usual brands that might cause slight idle issues. Another issue is the fact that some kits don't include new TPS bolts, which were necessary for my Trickflow 75mm TB and Plenum swap as I had to drill the head off of one of the TPS bolts to get it off the stock TB. Also be sure to get gaskets if they are not included with your kit. And yes, the stock tubing is a PITA to fit over a 75mm TB inlet.
Also, you may not necessarily need a new TB and plenum unless you are planning H/C/E/FI for your car in the near future, you will gain more from a CAI/Pullies than a TB/Plenum.
And regardless, it doesn't matter if the piping is plastic like K&N's or Steeda's aluminum. The air doesn't have enough time in the intake to warm up before it goes into the motor. In fact, my Steeda CAI and filter had much lower IAT's than my old K&N/stock piping setup. And, if your debating on fenderwell CAI and live in an area that sees deep standing water, do not get a fenderwell CAI, get a Ram Air Intake instead.
