I would do a search on this issue. Depending on the backspace, you will find users (like iskwezm) that will tell you you can run 275s, and apparently they're right. Then you will find people who say don't run 275s on a 17x8 rim because of "cupping". It helps to go to cornercarvers.com and read up on the tradeoffs of wider or narrower tires on a given rim. A wide tire on a narrow rim can be slower on turn-in, theoretically at least, but it will provide more ultimate traction.

Read up a lot and be familiar with the trade-offs and the only personal experience I can give you is that if you are treading a razor's edge on tire width, you could get cut. Or your tires could. :D Make sure you know the rim's backspace and how your personal setup differs from stock when someone is saying a certain tire size won't rub anywhere.
