Just wondering if by changing the stock wheel and tires 17X8 245/45ZR17 to 18X9 265/35/ZR18 my odometer speed will be affected and by how much?

265/35 is a good size for the front, but 275/35 is the size that won't affect your speedo.. thats the combo i have

265/35 would be a good size for you. They shouldn't rub in the front and your speedo will only read 1.5% too fast. I'd rather have it read a bit fast than slow.
