2 questions, oil pan and pulley options

5.0 from an '85 HO stang going into a '90 Mazda RX-7 convertible

Oil Pan:
The double sump oil pan is hitting my sway bar. Some folks who have done this swap have replaced the sway bar with one that dips lower, costs around $270-$400. I was wondering, is there an oil pan option with a shorter/thinner front sump? Why does this need to drop so low? Oil pan prices I've seen are much less than the sway bar prices (<$100).

Pulleys:
Right now all that's bolted to the block is a v-belt main pulley, and a water pump with no pulley on it. The water pump protrudes past the main pulley (see attached pic below). I have yet to bolt on the a/c condenser and alternator, not sure what pulleys they have on them. Someone suggested a rear-offset pulley for the waterpump (pic below), and someone else suggested I switch to '94-'95 serpentine belt pulleys. He said the serpentine pulleys are also closer to the block, but then wouldn't I need a shorter water pump?

What's the best option here?

Would I need a different water pump for that, or would it work with the one I have?

Alright, I called summit, they said I can measure the offset between the water pump hub, and the balancer (or whatever that thing is that the main pulley bolts to), and March (the pulley company) will have one that fits.

Still wondering about the oil pan, though.
