I just wanted to know if a 275 tire would fit on my 17x8 wheel? So do you guys think It would be fine to run on the street with this set up?

yup. It's not ideal but you'll be fine. Many do it all the time

A guy in our local Mustang club runs a 285 on a 17x8 wheel...but I think it is actually counter-productive.

It'll buldge and not hook any better than a properly sized 245.

Well ive got 285/40's on my 17x8 bullitts. Yea the bulge a little bit but they do hook a hell of a lot better than the 245/45's.
Heres some pics.

I disagree. I have 275 40's on the stock Cobra Rim and they do not have the squeezed look. I've been running these since about 1997. However, I am about to upgrade to the Torque IIs 17x9.5s. Can't wait. You will be fine though. Peace

Go onto whoevers tire it is you want to buy website, they have recommended rim width for tires. squeezing a 275 on an 8 inch rim and putting a 245 on an 8 inch rim actually won't get you much more tread width. 9 inch rims with 275s are about as much as I'd go, but that's just me.

you will notice there is no stretching or bulging on any of these combos. there is some good fitment info on http://tirerack.com
