The water thing is fine. If you have your radiator cap installed, it would take nearly 260*F to start to boil straight water at sea level. WHile there are heat pockets in the motor, reasonably speaking for a shake-down like this, you are fine. Water actually transfers heat 2.6 times better than E.G. coolant (coolant sucks at removing heat, but is needed for corrosion and lubrication concerns. It raises the boiling point slightly, but this is offset by the fact that it doesnt transfer heat well at all).
