After 2 years, I'm Back in the Game! - Engine rebuild need help!

Any help would be appreciated - Here's where I sit.

2.5 years ago 97GT went down with bad main engine bearing. Had minor power adders (U/D pullies, T/A, Mac Pro Chamber, Flowmaster Cat Back).

I purchased PI Heads & BBK Short Tube Headers & .020 Flat Top (non-nothced) CP Pistons for the rebuild - never installed

Changed Jobs, Relocated, bought a house, got married and now am getting a heafty tax return and want to bring my baby back to life.

Facts:
I want to stay N/A and get the best HP I can out of it.
I drive about 50% highway/interstate miles
I am extremely techincal and have resources to do minor to intermediate work in house

Plans:
Port and Polish (P&P) PI Heads
Stage I or Stage II Cams (springs if needed)
Forged Internals?

Options:
Purchase pre-built forged short block add P&P PI heads/Stage I or II Cams call it a day
Purchase pre-built forged long block w/PI heads (possibility of P&P and new Cams)
Use existing block have machined (possibly bored) reuse stock GT crank (machined) and add forged beams and Flat Top CP Pistons (need a good machine shop that would do good work yet teach and let me assist too.) P&P existing PI heads add Comp Xtreme Engery XE270AH Cams and Bee Hive Springs.
Other????

So advice?
