If you have front disc, you only need to adjust the rears, there is an oval hole on the backing plate that should have a rubber plug in it, pull the plug and use a brake spoon or a screw driver to turn the adjusting wheel until you can feel a little drag in the wheel. you'll have to have it jacked up to spin the wheel while you adjust. Then step on the brakes to reseat the shoes and check them again.

The brakes themselves are working fine. Its the lights that are not activating until depressed all the way. Can I adjust the amount of pressure that is required to activate the lights?

If I recall correctly, there is a switch where the brake pedal mounts up under the dash. The switch is probably too far from the pedal bar
