If you plan on a hydraulic roller cam, you will be better off with the Stealth than the Victor Jr, which needs higher revs to make power. A 575 cfm Speed Demon is enough carb. The magazines use more carb so that they can make max top end power, but too much carb makes a motor lazy at low RPMs and that's less fun. You want a snappy motor and you should not care if you give up 2-3 hp at the top to get it.
 
To answer an earlier question: that was flywheel power. Most "magazine" power is done with an electric water pump, no alternator or other accessories, so it's not what we see on a fully accessorized motor. A realistic power number for a streetable motor using aftermarket heads/cam/intake would be 300-325 at the wheels. If you do better than 325RWHP on a well-mannered 302-306, you have accomplished something, IMHO.
