Car temp goes cold 2 hot instantly

I have a 94 GT and when I start the car and after it runs for 5-10 mins the temp gauge from cold to red hot. I opened the hood and it doesn't seem to be over heating. I'm think just take the proper percausions and switch to a fluidyne radiator and a new thermostat.

Would you guys reccomend anything else. Also what degree thermostats come stock on these cars?
 
That can happen if there is an air pocket in the upper intake near the sensor. Steam can make the reading go all funky. Have you had any part of the cooling system opened recently? If not, perhaps its just a bad temp sending unit, or gauge. A real temp gauge would be a wise investment, I know I need one.
 
You don't by chance have your gauge's sending unit in the t-stat housing do you?

Otherwise, the guys are right on. gauge movements faster than one would think possible are often due to air in the system.

Grab a Perf 180* t-stat. I like the Mr Gasket line personally.
