Cooling Problems

In heavy traffic or lots of stop-and-go driving my temp climbs steadily out of control. I've tried several things to get it to cool down. No luck. On the highway or a good cruising speed it'll sit around 190, other than that it goes over 210 and will keep climbing until I get going again. I have a 347 stroker with AFR heads. Ford Racing aluminum dual row radiator. Weiand mechanical water pump with underdrive pulley. Flex-a-lite electric fan with thermal control matched to a 180 degree stat. I've tried different coolant mixes 80/20, 70/30, 50/50. etc. I even tried water wetter. Nothing is helping.
 
Lack of cooling at low speed is usually 2 things.

-Poor airflow through radiator
-Poor thermal transfer of heat from coolant to airflow.

You can try a fan with higher CFM, or a 3-core copper radiator (copper more efficient at heat transfer vs AL)
 
I agree that it sounds like the fan isn't pulling enough air across the rad. Is there any chance you could put the stock fan back on to test the theory? That way you wouldn't have to buy another fan & it not fix the problem. If not, maybe try the $25 junkyard Mark VIII fan. it works well for me & I only have an old stock radiator.
 
The fan and under drives together might be compounding the issue. I honestly don't know how many CFM the Mark VIII fan moves but, I don't have under drives yet either. Like the fan idea, you could put the stock pulleys back on, if you have them, & see if it helps. might be a band aid fix until you can get a fan with more CFM. Here is a pic of how I "rigged" my Mark VIII fan. you can pick up the metal straps at Lowe's or Home Depot. My car didn't have a shroud & I haven't bothered with one as it doesn't over heat. I'm sure there are prettier ways to do it but, mine isn't meant to be a show car.
