Unfortunately or fortunately, im not quite sure yet, I do have the skills to do it. Before the career change to Paramedic, I used to weld nuclear reactors in the Navy. What I don't have is a nice Tig setup like I had in the Navy.
I'm kind of at the point where I want someone else to do it so if they screw it up I have someone else to blame, screwed up I know. I want my car to be perfect. If I ever sell it I want it to be very difficult to tell it has been repaired. I would be upfront about it being repaired, I just don't want someone to be able to tell with one casual glance.

The link in your sig doesn't work for some reason. I had to cut and paste it into the address bar.

Anyway, your car looks pretty solid to begin with. Is it really necessary to replace all those panels listed or would partial panels or repairs suffice? Is there a lot of bondo we can't see?

Also, was that quote given with the understanding that you were bringing in a bare shell?

Has he actually seen the car to give advice on what should be replaced compared to what is better off being repaired or did he just list the amount of hours required for a list of panels you gave him?

Are they going to paint it as well?

Whether you replace or repair, I'm sure it will look great. I don't see how it couldn't. It's just a matter of how much it will cost to get there. Oh, and get some disk brakes for under that big block.
