Looking for a good winter car with 351 that i can swap out, any recommendations?

Hey guys Its getting closer to the winter and i need to find something to drive cause the stang isnt coming out this winter, not going to risk messin it up this year. I was considering a Bronco with a 351, I figured i could put my 5.0 in there and then have a 351 to build up over the winter and have ready for the spring. My only concern was the strength of the 2 bolt block. I know if i want a 4 bolt i would need to buy a very old vehicle which is not what im looking for. Does a newer bronco sound like a good idea? If built correctly along with a main girdle and about 500hp would i be alright? The mustang will be my daily driver again when spring comes and so i need it to be reliable. Also what about a stroker setup, is that a bad idea? I basiclly just want to have 500 hp for spring time and do it the most affordable way, while at the same time having a winter driver
