On 1/4 tank of gas my hatch weighed 2981 w/o me. It had aluminum heads, a/c delete, no spare tire/jack, removed tire well cover, removed dog-bone, and that's really all I can think of.
Other weight savings ideas (probably already mentioned): fiberglass hood (Kaenen makes really nicely fitting 2" cowl hoods), remove dog-bone, remove insulation/sound-deadening crap under carpet (if you still want the sound deadened you can do it better for lighter), rear-seat delete, fiberglass hatch (haven't tried this myself.... afraid of fitment issues), center console delete kit (probably 10 lbs - find them at that mustang resto website), aluminum driveshaft, Weld or centerline wheels, race seats, remove passenger seat or replace with race seat, removed front windshield, remove doors.
Add roadside assist to your insurance for 3 bux every 6 months and that takes care of your 2am problem, and the spare tire/jack is pretty heavy. I think the spare tire itself is 30 lbs.
