So I was initially thinking I'd keep the '66 in the garage after we moved, but I have been reconsidering that for the following reasons.
  1. We just bought a new to us family car that I'd like to keep garaged if I can (and the '95 certainly isn't getting kicked out)
  2. I actually liked working on the '66 outside at the old house since it kept the welding fumes to a minimum, helped with clean up, and was able to take advantage of a nice breeze on occasion
With that in mind, I've been looking at temporary structures online. I'd like something that costs less than $500 that can be fully enclosed. The car cover I used at the old house would allow water to enter if it rained long enough.

So far, I've found this. It has good reviews for durability, but water ingress at the seams is a possibility. Is there any thing else anyone might recommend that would get the job done? This will be anchored to one side of the driveway.

I may need to spend more for something that would be truly waterproof. What I'm really looking for is something that is waterproof, can be fully enclosed, and has front and back openings that are removable or can be tied out of the way.

This with enclosure kit, but it's $1136.
There are waterproof car covers for <$50.

I have a relative in MA who bought a cheap Harbor Freight garage like yours and braced the inside with 2x6's and his made it through a couple of winters.

I looked into the reviews of the one I posted and it probably won't last more than a year. Even if I added extra bracing, the cover material would deteriorate quickly.

I wouldn't mind going the waterproof car cover route. Might be tricky once it's on the rotisserie, though.

I’ve had two HF portable garages. The first one lasted for a few years until a nasty ice storm caved part of it in. The second one I just recently bought to get all the yard equipment and Atv’s outta the garage so the 94’ can bleed out all over the floor lol.
