I have an 1982 302 with v belt set up. Driving the other day temp gauge was fluctuating from 160 to 240 and back. Did this a few times then bottom rad hose blew off . Some help as to cause would be appreciated.

could be anything from a bad water pump, sticking thermostat, collapsed hose, bad fan clutch, radiaotor, etc.

was the car low on coolant
is there oil in the coolant or coolant in the oil?
was this in the highway or in the city
how old is the radiator, water pump, engine,

My thought on the fluctuating temps, then rad hose pop off is you may have been experiencing a collapsing lower rad hose, potentially low on coolant too. The collapsed hose could have stressed the lower rad hose to the point of breaking or pulling it off.

I just turned 1000 kms on the motor. All new motor, rad, pump, hoses and thermostat. It happened on highway driving. I really thermostat is the issue. If it stuck closed would there enough pressure build up in system to pop lower hose. Or could the over flow have anything to do with this.

Did lower rad hose burst (break) or pop off rad fitting?

I think if the thermostat was stuck closed you would have blown either heater hoses, heater core or thermostat gasket, not lower rad hose.

If you have an overflow tank, pressure should have vented there. I would then look at rad cap, it should have vented if system was over pressure.

If lower rad hose got very warm and then your pump was trying to pull more coolant than available, the hose would collapse. This collapse could pull a warm/hot hose off the rad fitting. What kind of water pump do you have (standard or high flow)?

The lower rad hose popped off. I have a high flow water pump. If overflow tank did not vent would that pop off bottom hose. I think overflow vent was clogged or blocked.

Pick of your system by rad cap and overflow tank would help here

If the pressure in the cooling system can't escape it will cause overheating issues and can blow hoses.
