Pulley modulation....3 to 2 pulleys...

For a 2001 Cobra (with minor mods):
If I'm having cooling problems with a set of underdrive pulleys, is it possible to re-install the original (OEM) water pump pulley, while keeping the other two aftermarket pulleys on?

I'm starting to notice my engine is running a bit hotter when autocrossing.

Or would you recommend changing the thermo instead?
