Helps with cracking, surface structure, and slows the final cure which raises the PSI rating of the concrete. If I can, I almost always wet cure my concrete for 2-4 weeks after pouring. You can raise the strength of concrete 1000-2000 psi past it's rating by wet curing.

I paid $2k for a 14x30x4" parking pad recently, 4000 psi. Feel like it was a bit steep, but out of 3 contractors I called, only 1 showed up, and he was 3 days late.

You southern folk are lucky that you get away with shallow footers down there. Here in MD, it's 30" deep minimum. Further north, even deeper.
