Thermostat 1/2 inch outlet to water pump! What is its purpose?

I have a 92 5.0, and I have taken out all the vacume lines and other hoses that are not needed for a drag car. One thing I can not figure out is, what is the purpose of the 1/2 hose that comes out of the housing to the water pump? I deleted and pluged it up about a year ago and have not had any problems with cooling what so ever. I have no AC or Heat either. I recently went to a CSI electric water pump and it came with plugs to plug the pump where the 1/2 inch hose would normally go. My next question is where can I get a thermostat housing that does not have the outlet. I would rather not have one at all then plug it. I ordered a CSI swivel housing but it has the outlet despite the service rep telling me it did not. I was looking on the CSI website and it looks like the Big block housing does not have the outlet. anyway has anyone else done this to their motors? but most important I just want to know what the hoses purpose is?

yep, allows coolant to flow with stat closed, as PP said. remember the coolant in the heads will get hot faster than the bottom end. IIRC, the bypass helps with allowing the coolant to flow with the stat closed to help with this.
