We only recommend cc-plates with solid/spherical bushings for use with coilovers.
You have to confirm that the coilover conversion kit you're using will fit the struts you want to use.
I avoid coilovers in the rear, because bolt on coilover kits generally protrude into the wheel well and cost you some valuable tire clearance. Been there, done that.
 
For lowering the car, I'll recommend these springs:

They'll drop the car an inch and a half, but still have a decent ride. Again, you could go with stiffer springs for road racing or softer springs for drag racing, but these are a great choice for a street cruiser.
