Washing my engine.

Not sure if this should be in tech...

After I wash my engine with a degreaser, do I need to relubricate anything? I don't want to wash lubrication away from somewhere that it needs to be.

Nope...not that I have ever heard of. You should be fine!

after cleaning the engine with degreaser, you can use engine dressing like CD-2 to give it a shiny look if you want

make sure to cover the COPS so no water gets into the plug wells

Might want to consider lightly blowing out the COP's with compressed air afterwards and give them a shot of WD40, just to seal em up.

Cover up your fuse box and any exposed electrical componets. You can use plastic bags. I do it with my Mustang.

Run the engine for about 15-20 minutes to dry it off. Or you might end up with a miss.

Your engine is lubricated on the inside, not the outside.
