Whats best way to re-calibrate your gaues after?

Whats best way to re-calibrate your /needles/gauges after installing a MAC white face gauge overlay set-up???
i documented all the needle settings, But how should I re-install them-With the car running, or Key off/No start???. Key on/No start, running Whats the scoop???

Can you adjsut them while on the highway @ speed....
