When I put the heads back on, all I really need to do is turn the engine over until cylinder 1 is at TDC and then put the distributor where the rotor is pointing at the #1 contact. Right at 12 o'clock IIRC. Sound about right?

Make sure it is TDC on the #1 compression stroke. AKA turn it over until the #1 intake valve starts to close. When the #1 piston is at TDC after the intake valve closes you are good to set your distributor as stated above.
its the one closest to you (front) on a SBF Windsor #1 cylinder. If you ever get confused, just look at the intake or exhaust port in relation to the corresponding valve.
If you can't watch the valves easily (heads / valve covers already on) just place a rag next to the spark-plug-hole on #1. When it gets puffed out of the way by air, you're on the compression stroke.
