There are quite a few items that can be ordered and installed at the Shelby mod shop on the SGT's. When I first started looking at the information (Dec/Jan) the information was hard to come by and you really had to dig for it. NOW, they have an entire website dedicated to it.

There are some other forum boards/sites eek that have a few SGT's on them with one off parts. It seems they'll pretty much do anything you're looking to do (within reason of course). Makes me alomst (almost) glad I waited as long as I did for my car. Had it been one of the first, I'm not sure any of the mods would have been available for it. Patience...what a virtue...
