The balancer/flywheel/flexplates will all interchange fine, but balance weight must be matched to engine...

Headers will bolt up fine, but may not fit chassis.

Speaking of chassis...
The 5.8 is 1" taller than the 5.0, so hood clearance is of concern.
The 5.8 is about 2" wider if memory serves...

car has a 2.5" svo cobra hood on it so hood clearance is good!

i got a set of 351w fuel rails but the feed and returns are on opposite side I need them to be on. What do I have to use to extend the stock 5.0 rails to fit?

Just use the same type of hose that it has on, you just need a longer one that's all. My fuel rail hose had to be extended when I swapped over to a Trick Flow R intake b/c of the width of the lower.

351W uses a different distributer. It's slightly shorter. The 5.0 distributer will actually fit, but it puts too much pressure on the shaft, and it busts the oil pump.

A 351 will produce more power than a 302, but it's almost negligible. The difference is that it will produce the same power at a lower rpm, making it more usable.

The biggest advantage to a 351 IMHO is strength. It is a much stronger block than a stock block 302 so it will handle a lot more power. 302's are said to be in the "splitting zone" when they reach around 500 rwhp. A 351w can handle much more than that.

Even if someone were to build a 351 and use all of their 302 parts on it, if you're going forced induction you can't really go wrong. A guy on the "other" thread put together a very mild 408 and topped it off with a SQ trim and it's a beast!
