im setting the timing on my 87 gt and I read on here 14-16 degrees btdc was a good number to pick up some horsepower. is that true? also, can I just run a short belt and remove the power steering assembly to get rid of my power steering or is there more to it than that? How much does the power steering weigh?

Yes, 14 - 18 degrees for premium gas.
Power steering...you can do it that way, just loop the lines and make sure there is oil in the rack. It will be a bitch to steer with fat tires though.
I would find a manual rack in an early Mustang though and swap it in.
