I did a 331 with a 76mm Turbo, AFR205s, TFS Box-R, and a hydralic roller custom cam. It made 762 rwhp through an old-style TKO. It's almost as streetable as stock and pulled 22 mpg on my last 4 hour trip from AL to FL.
Now, that's certainly do-able, but I have to question if you really want to spend the kind of money and time it's going to take to do something like this. Since you said you just want a weekend warrior, why shoot for 600rwhp? In my mind, you don't buy a dart block to put down just barely more than is safe with a stock 302 block. You can save money and complexity by running around 500rwhp through the stock 302 block on a safe tune. It's easy: premium off-the-shelf H/C/I with a 67-70mm turbo. Do it this way and you will save $10k+ Go to 600rwhp and beyond, and you will have to start over with every part of the car: engine (aftermarket block), suspension, fuel system, drivetrain, etc...) If you're going to do all that and make a weekend warrior out of it, why would you restrict yourself to 600?
Dude, 500rwhp in a stripped out and setup turbo fox-body would crush a 600 rwhp '03-'04 Cobra street-car.
