engine bay cleaner/degreaser

what is the best solution to clean the engine with and how do you guys go about it and what parts should i cover?

i just spray the engine down w/ Simple Green, let it sit a few minutes and then spray it out w/ the hose!!!! does a great job and looks pretty darn good
