Help me with wheel size change

I am in the process of building a custom 1967 coupe with a 289 HP for power.
I have been told that I need to go with 15 inch wheels due to larger wheel selections as well as tires being more easily available. I'm really wanting to go with 60's on the back and 70's on the front. I have been told that tires rubbing the fenders can be avoided with proper wheel back spacing.
Can you guys please tell me what I need?

One thing I failed to mention on this post....
The front has disc brakes, the rear had drum...

I have read that 4”-4.5” is the max back space up front. I just put 15x8” wheels on my ‘66 With 225./60s I think the back space on my wheels is 3.75”. No clearance issue.

Do you have disc brakes up front? Would this effect anything?
After reading your post it has me wondering if the back space is what is stopping the rubbing. Years ago I was running 60s on back and the quarter panels came down and rubbed/cut the tires. I put air shocks on it nd raised it up big time. The rubbing stopped but the ride was extremely harsh and rough. The front had 78s on it but they rubbed the fenders during sharp turns.
