I've just turned 140K on my 01 vert and I'm wondering what I need to do to keep it going strong. I'm especially interested in what I need to do with the wheel bearings, tranny fluid (5sp), coolant and anything else I need to consider. I've replaced the ragtop, clutch and shocks (well after dropping it with Eibach Pros), everything else is original. What do I need to do to get to 200k+!

Just do the regular maintance like fluid changes, brake pads, and shocks. The others you'll have to repair as the issue comes up. As for major problems I've had with my 97 (163k), the pinion bearing went out, the T45 broke a few shift forks (I drive her hard sometimes), the AC doesn't like holding freeon, the fan motor and of course the intake has been replaced with one that has an aluminum crossover.
I have to say though, with new tires and new shocks/struts, the car will feel like new.

I regularly see police cars and taxis with 3-400k miles around here.

Just be proactive in maintenance and repair. With some careful attention, many modern-day automobiles are capable of hitting the 200,000 mile mark.
