Need adive, but not on my Stang.

I just dropped a new 350 in my '92 Chevy truck so I can pull my Mustang to the races but it seems alittle low on power(220 or so stock). Since its a new longblock I don't want to dig into the guts yet so I ordered a Jet chip, electric fan, K&N filter, good exhaust, and a 160 stat. I think these items will take it from 220 to 255 or so. Can I bump it to 275 or 280 without tearing into the engine. I feel like unloading the car and pulling the truck with it. I wish my gearing was lower but its 4WD so that is not going to happen. The high gearing really boggs it down, Its does 80 mph at 2,200 rpm. I'd rather have more bottom end than top speed. Chevy messed up the gear ratios on their 1/2T trucks.
 
A little advice, I read that you shouldn't go lower than 180* for a thermostat on Fuel Injected Cars. The lower the stats temp is, the more wear on the cylinder walls you will have, resulting in your motor not lasting as long as it could. Just my 2 cents.
