new wheels, 18x10.5. Yet another what tire size.

I'm gonna order the new american racing "rebel" and the guy at town fair wants to know what tire sizes i want to go with. What is the largest tire i can fit on a 18x10.5" rim without modifications? Also, the rims have a nice lip on them, i want to get the biggest lip i can on the wheels. Does this have anything to do with offset? If it does, what the most, or the least i can go with to get a nice deep dish look? I appreciate your help guys, thanks.

here is a link for 315/30/18 tires. i used to have 17x10.5 rims in the rear with 315/35 tires and there were no problems. do a search on 18" rims and you'll get a hundred pages of info.
