PCM, Recalibrate and Remap?

I've been reading the new issue of Mustang Enthusiast and they talk about modes that require reprogramming. Like removing the catalytic converters, or bigger injectors and throttle bodies, etc. Can the average guy get a Hypertech or similar piece and reprogram themselves or must it go to a dyno for air/fuel adjustments etc.
My car has an X-pipe and no cats. I don't want to give away any power or lose it do to mods.

Unless you do major mods ,you wont give any power away..

Hypercrap will probally hurt the car more than it helps..

They offer a racers package which gives you the same control over your car a tuner does.They also offer dataloggers to match the package..
