running wayy to cold

ok i have a 3 core 3 row rad in my car with an elec fan from a mk7, so i figure my cooling system is pretty well set up. The prob is i never get to even use my fan cause my car barely hits 155 driving for like 20 min with a 5 min warm up. I thought my thermistat was stuck open so i went and got a brand new one (stock 195 degree) and it still takes forever. Is it possible that my cooling system is too much for my engine? i have pretty much all trick flow stuff, heads,intake,cam etc. i dont understand why it wont get up to operating temp, what am i missing here?

are you using the stock or aftermarket gauge...may just be the sender/gauge is on the way out.

Drew - get a thermometer, a pan full of coolant (water/antifreeze mix) and plop your 195F t'stat in the pan on the cook top. Bring the temp. up slowly while watching the t'stat. Verify that it's opening when it should. It should start opening somewhere in the 193F-196F range and should open all the way by no higher than 197-198F. If it's not working correctly, get another one and test it the same way before you install it. The t'stat is there to control temp - it shouldn't matter how big your radiator is; if you have mega cooling capacity, the t'stat will open just a little and let a little 'cooled' coolant in and should control the temp right at 195F. And like the previous poster said, all this assumes that you've got an accurate gauge/sender (not factory) to measure with. Are there any other cooling system mods we need to know about? Have you bypassed anything? How is your fan controlled?

my fan is controlled by a probe but i unplugged it and i have it on a switch, i also have a digital water temp gauge inaddition the the stock one.
