Thermostat Selection

What factors govern the selection of the thermostat operating temperature? I want to replace mine as part of my engine makeover. Are they normally marked with the operating temperature, or do you have to test them?

the thermostats are always marked when you buy em......and i always get the 180 degree one......an old timer explained to me why I should always get the 180 one out here in CA, but to be honest i forgot why....lol....but at least i remember that much, which is what counts.....

I believe that I run a 180 degree thermostat in my 1970 stang which runs a stock 302 and it hasn't overheated on me.
