Where's the MAF on the 05's?

Newer Ford cars have the MAF in the intake air box cover.

If you look at any of the good photos of the '05 Mustang engine bay, you can see an electrical connector on the air box cover near where it joins the air intake tube. I'd imagine that's where the MAF is.

As I said above, it appears that the MAF is in the airbox cover. If you buy a replacement air-box or air box cover for vehicles like the Lincoln LS & 2001 - 2004 T-Bird the MAF comes as part of the air box cover.
 
The MAF is in the air box cover. Also it seems like the air box is alot more restrictive than 99-04's. Plus I could swear that the air filter itself is a panel, and not a conical. Just by looking at the shape of the air box you can tell. Is it just me or is this engine just begging for a nice Densecharger set up? Or maye a C&L True Flow inlet pipe/MAF system?

I think it's begging for a lid (like the LT1/LS1's) and a ram air setup...

The air box looks HUGE to me. I don't think you'll get the gains you think yo will with any aftermarket stuff.
