I advised that you hook up the VSS and fuel pump. You countered with a 'it seems fine so far' mentality.
If you just want the car to run, then this is a good way to approach the EFI system.
If you want the car to run at it's best, then attention needs to be paid to this kind of detail.
And yes you have lost functionality of the diagnostics the computer can provide.

As for the MAF stuff...
You MUST pay attention to details here.
If you dont' then the odds are you will have some weird problem.
Too rich at idle
Too lean at idle
Too much timing at wot
Too little fuel at wot
...
The list goes on.

You seem to understand the importance of MAF selection/calibration.
