I wouldn't use grade 5 bolts on the crank pulley. You can easily cut down a longer grade 8 bolt. Just use a cut off wheel and bevel the cut edge a bit. A correct size nut can help straighten the threads out or a tap and die kit.

Yup spin the nut on before you cut the bolt. Then when you spin the nut off it will straighten the threads out for you.
