Are you unpluging it while the car is turned on?

The mass air flow sensor converts the amount of air drawn into the engine into a voltage single. The ecm needs to know intake air volume to calculate engine load - which is necessary to determine how much fuel to inject. This will obviously cause problems if you disconnect it. Are you replacing a your current MAF?

Yes, if you unplug your MAF while the car is running, it will stall unless you continue to open the throttle manually.
