I ran the nitto 275/40's for years on stock 17x8 inch rims. No problem, hooked ok and they worked because the nittos run very narrow for a 275/40 tire. However, does anybody have any experience with running the BFG's or Mickey Thompson 275/40's on an 8 inch wheel? Im thinking its too small of a rim to perform properly.

I've ran 275x40 on a 17x8 in several different street tires for years, but have never BFG or MT drag radials if that's what you're referring to. I ran 275x40 BFG Comp T/As on both 16x8 and 17x8 with no problems. They bulge a little but I like the look and don't regularly slam them into curbs or anything.
